So recently, my high school friends decided to throw this Vegetarian Challenge reunion. Why, I have absolutely no idea, but since I stand by my opinion that it's more of a waste of money to order vegetarian stuff than meat at restaurants, I guess the alternative is to make your own.

By winning those challenges and solving the clues, the winners get to set certain rules to the challenge that affects everyone participating. The loser, of course, gets a punishment, namely restrictions placed on what ingredients they can and cannot use.

My only restriction was that I couldn't use mushrooms. That's ok, I made a bocconcinni tart... it's really just short crust pastry cut into rounds and stuffed into a muffin hole (I didn't have a round cutter and used those round things you put on a frying pan to fry eggs), cherry bocconcinni, grape tomato, yellow pepper tossed in truffle infused oil and some cashew and roast onion dukkah, and mint leaves cut into shapes of sakura. Why did I bother... the leaves just shrivelled while I left it in the oven to keep warm T T

It was winter solstice night a few days back from the event, so I made glutinous balls with peanut and sugar inside for my vegan dessert.

MS made this wonderful vegan carrot and walnut cake. I have no idea how to make vegan desserts, I like eggs and butter in my cakes.

FL made san choi bao, with lots of bright coloured veggies...

MS made two mains because she had lots of restricted ingredients as well as essential ingredients, this was her fried artichoke with homemade wasabi mayo (yes, wasabi was an essential she had to use). She also has mashed wasabi peas at the bottom!

Her second: scrambled eggs and a lot of other ingredients, but she got the flavors just right and everything balanced out really well. Loved the olive sourdough bread as well.

BT's vegan dessert... wait, I just realised, is puff pastry considered vegan? o O This was our final clue from BT, and we had to figure out which was ours before we were allowed to eat it.

Our whole challenge started off with FL's clue, which was the Land of Nod puzzle. BT turned up with a creatively decorated vegetarian pizza. Because one of her essential ingredients was apple, she put apple on top, which worked pretty well I think.

Another san choi bao from GZ, because his essential turned out to be lettuce. This one had a filling of rice with a really spicy chili lemon sauce.

SM was the only one who brought ONLY a dessert. Overly sweet for my taste, but still, interesting flavors, he used rice milk and coconut milk, with caramalised nuts.

It was quite a fun experience, it definitely felt healthy, and making your own vegetarian stuff and tasting your friends' cooking is a fun way to meet up, instead of the usual... movie... restaurant... catch ups.

Not allowed to have dairy if you're vegan?
How bout that yoghurt dip..
Also doesn't tempura batter usually have egg in it? Or does it still work out without it
The mains can be just vegetarian, so you can use dairy and eggs, but the dessert has to be vegan, which is no animal products, at all.
Ah, I see. I should've read the rules more closely. Probably too caught up on the ridiculousness of rule 8
